The Mill

Once in the mill, the olive fruits are washed, crushed and carried to large containers, where they are slowly "softened", by rotating metal blades. "Softening" takes about one and a half hour to complete and is a very important step, because during this time the oils get released from the olive flesh. Following this step, the mass is moved through a centrifuging machine, which separates the liquid parts from the solid parts.

At this point the solid parts are discarded and the liquid parts are moving towards the final step of the process in a decanter, which removes the water from the olive oil, leaving only fresh extra virgin olive oil ready for storage.

We monitor the olive oil extraction process closely, to avoid unnecessary exposure to high temperatures and mishandling.
