Harvest

The time of harvest is an exciting time for our family! While harvesting, we spread nets under the olive trees and use an air compressor system to shake the fruits off. After the nets get full, we empty the olives into well aerated cloth bags and move on.

At the same time, the branches that are heavily loaded with olives are cut off and fed into a machine which separates the olives directly into bags, while it discards the branches to the side. When evening comes, we carry the bags to the mill and the olives are processed within a few hours.

We start harvesting our crop in early December, when the olives are still partially green. Although green olives yield less than black olives would, the quality of our olive oil is superior and its’ shelf life extended.
